One of man's most versatile plants, has been used in  cough syrups, as folk remedies in poultices, and the fibers in linen.  Flax sprouts have a mild flavor that compliment salads and soups.  The length is 3/4 to 1 inch which takes 3 to 4 days to achieve.  Sometimes they are grown a little longer and exposed to sunlight for 3 or 4 hours to develop their chlorophyll which further compliment salads.
