Broccoli
 A bud and leaf vegetable.

Developed in Southern Europe from a cabbage plant similar to cauliflower.4

Select     Fresh, green broccoli with compact buds, dark green, dark sage-green or purplish green. Stalks and stem branches should be tender but firm. Store in a plastic bag in refrigerator and use as soon as possible. Lowest availability June-September.

Serve Hot, as a vegetable with poultry or fish. As a separate vegetable course.

Cold, as a salad, or as Broccoli Sprouts 

Broccoli is also used for Soup and gratineed dishes.
