Asian Long Beans, Chinese Long Beans, Yard Long Bean, Asparagus Bean   Dolichos sesquipedalis    

An Asian vegetable that does grow to a length of 3 feet if left alone.  Asian or Chinese Long Beans are not true green beans but are actually related to black-eyed peas. The usual market forms are however about16 inches in length.  The bean has a short growing season and grows in subtropical climates such as California in the summer.

Choose firm beans whose ends are not shriveled and cut into serviceable sizes.  The beans are so long that 1 bean usually is a potion for 1 person.
