Cauliflower is considered one of the convenience vegetables.  Almost all Cauliflower comes to market stripped if ribs and leaves and ready to cook.  Cauliflower is served in many ways as a hot dish but is often included in raw vegetable trays with dip as its somewhat neutral flavor and crisp texture have become popular in salads and other cold food applications.
