Sprouted from a tiny red-brown bean that is not that well known in the West,  he Adzuki Bean is however well known in the Orient where it has been used for centuries in dishes for special occasions.  The sprouts should have spouted for,  four to five days and be 1/2 to 1 inch in length.  the adzuki bean sprout may be substituted in recipes calling for the more traditional mung bean or soy bean sprout.
