            Berliner-style Sausage

            A coarsely cut sausage made of cured lean pork. May 
            also include a small amount of beef. After curing, the meat is 
            stuffed into large artificial casings about 3 inches in diameter, or 
            beef casings. Berliner is smoked from 2 to 4 hours, and then cooked 
            in water from 4 to 6 hours. Contains no spice. 
             Serve for sandwiches, cold meat platters, salads. 
            .Ingredients: Lean cured pork, or lean cured pork and small amount 
            of beef. .Seasonings: Salt, sugar . 
            .Availability: Generally sold as sliced cold meat.
