Deep-fat Frying - Frire

A popular form of cooking, deep frying requires oil or shortening to be brought to a temperature of 325° to 350° F and food product in small quantities compared to the amount of oil to be placed in the hot oil and fried until crisp and done.

The oil used should be monitored as old oil or oil that has broken down will turn dark, foam, and cause off flavors in the fried food.

Foods should not be salted over the oil as the salt will quickly break down the oil
