Globe Artichokes

Grades    U.S. Grade Standards for artichokes provide for two grades, U.S. No.1 and U.S. No.2.

U.S. No. 1  properly trimmed, fairly well formed, fairly compact, not over developed, free from damage caused by pest such as worms, bruising, freezing, disease or other means.  Not more than 10%, by count may be below requirements but no decay may be present.

U.S. No. 2  artichokes which are badly spread or over-developed, and are free from serious damage caused by worms, bruising, freezing, disease, insects or other means.  No more than 10% by count may be below this requirement but no decay may be present.
