Mole Negro (Black Mole) is dark brown, and is often used during festive celebrations. Mole Negro is served with chicken and sometimes pork. The Chiles Guajillo (hot), Mulatos (mild), Pasillas (hot) and smoky Chipotles (very hot) are ingredients used. The chilies are toasted black on a comal (flat grill) to give the sauce its deep, rich. but often sharp flavor. 

Along with the chiles. spices such as: cloves, allspice, thyme, marjoram and oregano are used. Finely ground toasted nuts and seeds like peanuts, almonds and sesame seeds are added to help thicken the mixture. White onions are then used along with raisins, cinnamon, garlic, fried tortillas, bread and Mexican drinking chocolate (which is sweetened with cinnamon sugar). All ingredients are either added in a ground state or after the mixture is assembled, when it is pureed into a thick sauce. almost a paste. This mole is very close to the Mole Poblano or Mole Oaxaca. The ingredients are a little different, but all use the very aromatic sweet spices and chocolate.

To enrich the flavor of moles are sometimes fried in a little oil or lard. This process also helps to reduce and thicken the mole, as well as to make it more palatable: or they may be diluted with various stocks to make a base for other sauces.
