A deep chocolate brown when ripe, it becomes blackish brown, very wrinkled, and flattened when dried, like the ancho.  In fact, they. are indistinguishable before being soaked  The chocolate-like flavor of the mulato is sweeter, richer, and a little more pungent than the ancho.
