Frizzes: [dry sausage] An Italian-style dry sausage, typically 10 to 12 in. long, 3 in. in diameter, and closely wrapped with Italian hemp. Cured lean pork, chopped coarsely and a small quantity of cured lean beef are stuffed into hog middles. The product is air-dried from 60 to 90 days. Frizzes are not smoked.
