Shiitake  (sheet-AH-kee)

An earthy textured mushroom that's broad availability has made it a popular mushroom for restaurant and home use. The long woody stems and large floppy dark brown caps make it easy to identify.  The stems are too tough to eat and should be removed.  The flavor is rich and meaty with a delicate texture.  Available fresh or dried.
