Hedgehog  Dentinium repandum, Dentium umbilicatum,  Sweet Tooth, Wood Urchin, Pied-de Mouton and Hyde Sinue (French), Steccherinos (Italian), Semelstoppelpilz (German), Kawatake (Japanese)

"Pied De Mouton" (sheep's foot)  is a forest mushroom found under deciduous trees in late summer and autumn.  The firm creamy white flesh that is best cooked slowly.  It has furry gills under the cap, which should be removed by scraping before cooking.  With caps that range in color from white to the orange-yellow of chanterelles, it is irregular in shape the Hedgehog varies in size from caps the size of a quarter to larger than a silver dollar. The mushroom has a rich, hearty flavor.  The Hedgehog is available fresh and dried.

The Dentinium umbilicatum is a variety that rarely gets larger than 2 inches and is said to have a superior flavor

Storage  14 days under refrigeration

Preparation  Can be used in the same manner as chanterelles, casseroles, stewed, sauces, sautéed

Madeira bring out the flavor of the Hedgehop well.
