Use a base of Madeira Sauce, add herbs, such as thyme, bay leaf, sage rosemary, and basil, a small amount of tomato sauce, and a pinch of cayenne pepper.  Garnish with calf's tongue, pickles, quartered mushrooms, pitted olives, and veal quenelles.
