Turkey, goose, mature duck, chicken and game birds often have large tendons or sinew in their legs that should be removes.  Locate the tendons that lie along the bone at the foot end of the leg.  You can pull the tendons from the severed leg with pliers or cut a slit on the back of the leg place a sharpening steel in between the bone and tendon and turn removing the tendons in a screwing fashion.
