Grouse


Ruffed Grouse


The British Red Grouse is considered the king of the game birds.  Unfortunately all attempts to try and raise this variety domestically have not been successful.

Other members of the grouse family in Europe include the ptarmigan, capercaillie, hazel hen and blackcock grouse. 

In North America the grouse family includes the sage grouse, spruce grouse, sierra grouse, ruffed grouse, and prairie chicken.  Younger grouse are good grilled, roasted and roasted; while older birds should be used in casseroles or braised.
