The meat of a farm raised goose is sweet, all dark and young geese are tender and juicy. Popular sizes vary from four to fourteen pounds ready to cook weight.

There are two classifications of goose; young goose and mature or old goose.  The young goose may be either sex.  These birds are recognized by tender meat and a pliable windpipe that is easily dented.  A mature goose may be either sex.  It has tough flesh and a hard windpipe. 

Goose can be purchased fresh or frozen year-round, ready to cook. A pound of ready to cook weight equals one portion cooked.
