Considered by many hunters a traditional holiday fare the wild goose often graces the Thanksgiving or Christmas table.

The flavor is more robust than farm raised goose and not always popular to the uninitiated although the goose as a more mild flavor than duck.

Smell the meat before cooking.  If it has a fishy or muddy odor you should marinate it and serve it with a rich flavorful sauce.

Older tougher birds benefit from moist cooking techniques so match the cooking method to the product you are working with.
