Birds, like big game can be tenderized by hanging and aging.  In this case the bird should be dressed but skin and feathers left on and placed in a refrigerator for a few days.

In the past game birds as a general rule were hung until the first whiff of tainting occurred around the crop or vent.  It is now generally accepted that there is little need to hang game birds as many people find the taste objectionable.

It is important to remove all surfaces exposed to air before cooking the meat.
