Coffee is consumed by over 109 million Americans daily and after oil it is the second most traded commodity in the world. In recent years regional roasters have created great interest in the gourmet coffee sector spurred on by companies like Starbucks.

Like most natural products coffee is greatly affected by where it is grown and how it is handled.  Coffee plants only grow in tropical climates but do not do well in hot weather.  for this reason the closer to the equator the plantations are the higher the altitude needs to be (3000 to 7000 feet above sea level).  The best coffees usually come from high altitudes where hand picking is difficult but necessary.

There are to varieties of coffee plants, the Coffea Arabica and Coffea Robusta. Coffee is not the fruit or berry of the plant but the seed or pit within the berry (called cherries) that is deep red in color when ripe but there are also plants tat produce yellow cherries. The fruit of the cherry has a sweet honey like flavor.
