Drum are found along the Atlantic
coast. Their names come from the resonating sound made by the muscles
attached to their air bladders. Drum are a small fish that have a mild
flavor, sometimes described as tasteless. They have a coarse texture and
careful handling is important for this species.

The red drum is notable , and commonly known
       as the
redfish. It achieved fame by its use in Cajun cooking as Blackened
Redfish. In fact this type became so popular that shortages have occurred
and in many states the red drum/redfish is now protected. Black drum or
weakfish (sea trout) are now used in its place and are becoming popular in
      their own right.
