Kale   A leaf and bud vegetable. Also known as sea kale or collards. An open cabbage-like plant with green leaves. Use as spinach. Serve with hard-cooked eggs or butter sauce.  To prepare cut off and discard root ends, tough stems, and discolored leaves.  Cut out and discard midribs. Wash, lift out of the water and shake well.  Check to make sure all sand has been removed.  Boil 10 to 25 minutes in salted water and boil chopped frozen kale 8 to 12 minutes. Boil the frozen, chopped collard greens 20 to 25 minutes. Do not use baking soda as it destroys the vitamin C and will make the kale mushy.
