Beets Tops include the leaves and the stems of the familiar root vegetable. They should be eaten when the beets are very young or before the beets themselves have developed. Beet tops are not used as much as some greens, but they have a more agreeable flavor than many greens that are more popular. When young beets are purchased with the tops on they may also be a source of beet tops as well as beets.

Beet tops are also cut and quickly cooked and served as a vegetable on a hot dish.
