Bonito (Sarda sarda) Striped bonito, short-finned tuna

The Atlantic Bonito is found off the east coast of the United States as well as the Mediterranean and Black Sea while the Pacific Species are found along our west coast south to Chile and West to the Indo Pacific Region.

These are considered to have the least quality in the Tuna family and can not legally be labeled as Tuna. 

The meat is very strong flavored and is usually brined before cooking.

Preparation: Bonito must be brined before cooking. It bakes well after it's been salted, seasoned and dredged in flour or bread crumbs.
