Maine Crab and Tuna Tartare

4	slices	Fennel, shaved
4	sprigs	Chervil
1	ea	Potato garnish ring
	fill mold	Crab salad
	fill mold	Tuna tartare
1	squirt	Curry oil
3	inch, ring	Hoisin plum sauce
Presentation:  Place fennel and chervil inside the potato ring garnish. Fill a 2 inch ring half with crab salad then half with tuna tartare. Squirt a 1- inch ring of Curry oil, then in center squirt enough Hoisin sauce to create a 3 inch ring. Push out tuna from ring and place in center, top with potato.
