Valencia
peanuts  is a long peanut that usually has three or more small kernels to a pod. They are covered with a thin, bright red skin. Valencia peanuts usually are roasted and sold in the shell or used as boiled peanuts. This is the peanut of choice in Mexican dishes including Moles.

Valencias are grown mainly in New Mexico and account for about 1 % of U.S. peanut production.*
