Pistachio

A nut native to Asia Minor. Pistachio nuts are white, but are most often seen in the red shells, an artificial color. Pistachio nuts are sold loose and packaged in boxes and bags. The nut meat is green; pistachio nuts are also sold shelled in jars and envelopes. They are used primarily as a nut, but are also used in confections and in some cooking. Many famous near eastern rich pastries and cookies contain pistachio nuts.
