Mexican Lime  Citrus aurantifolia ( Key Lime, Dominican, West Indian)

Native to southeast Asia. Was cultivated for centuries throughout Asia and the Middle East.

Much smaller than regular "Persian" limes ranging in size from a ping-pong ball to a golf ball averaging 1 3/8 inches and a length of 1 1/2 inches, ripening to yellow, although often used when green. The Mexican Lime tends to be more aromatic in flavor and scent than other limes. This lime peel is thin and leathery, smooth and greenish-yellow when ripe. The flesh is also greenish-yellow and interior is divided by 10 to 12 segments, quite juicy and has a higher acidity than regular Persian limes.

Most of the commercial production that does exist is converted to frozen juice for use in Key Lime Pie or in beverages and fermented into a condiment known as old sour for use on fish and other seafood. The fruits can be used just like any other limes.
