Legume, bean and pea salads have long been popular throughout many of the world's cuisines.  As with pasta, grain and rice salads the doneness of the bean of pea is of  significant importance.  The shape, eye appeal and texture all rests on proper preparation of the main ingredients. 

Beans and Peas can be paired with both mold and robust flavored ingredients, however ingredients like onions are often used to spark and enhance the flavor of the bean or pea.

The basic guidelines for  making a legume salad.

bulletIn a legume or bean salad the bean or legume is the body of the salad
bulletUse just enough dressing to evenly coat all the salad's ingredients.
bulletUse fresh herbs and mix them directly with the pasta or the dressing.
bulletToss ingredients with high density like raw vegetables, in the pasta salad together before mixing with the dressing
bulletEither mayonaise or oil and vinegar based may be used
