One of Holland's most famous cheeses. Gouda is a mild, nutty semi-hard cheese. Softer than Edam, with or without red wax coating.  Aged versions can have robust flavor.

Cheeses with the word "boerenkaas" on the label are usually more flavorful as they are made with Netherlands cow's milk.
