Look for hard firm onions that are dry and have small necks they should be covered with papery  outer scales and be free of green sunburn spots and other blemishes.  Onions with wet or soft necks should be avoided as this is a sign of immature or decayed onion.  Onions with thick, hollow, woody centers in the neck or fresh green sprouts should also be avoided.  size selection depends on the end use of the onion, large for slicing, medium to small for roasting or boiling and small for pickling etc.
