POPOVERS

1 cup flour 
1/4 teaspoon salt 
1 cup milk
2 -eggs 

Sift the flour and salt into a bowl. Combine the milk and well-beaten eggs and stir gradually into the dry ingredients to make a smooth batter. Beat with a rotary egg beater for about 2 minutes. Fill hot greased muffin pans two thirds full. Bake in a hot oven (450° F .) about 35 minutes until they pop. Reduce the heat to moderate (about 350° F .) and bake 15 minutes longer.

Serve immediately.           Yield: 8 popovers.
