Russet Burbank   Large, long, cylindrical or slightly flattened shaped tuber.  The skin has numerous well distributed, shallow eyes, russeted skin, short elbows, white flesh.  The Russet is a very mealy potato when grown under favorable conditions, this makes it the favorite to bake.  It is considered to be only a moderate candidate for potato chips, but give the chips a darker hue from one end of the tuber to the other giving a batch uneven color.  The variety is good for french fries, since its long shape and high specific gravity are desirable traits.  This variety is also considered good for dehydrating.
