Honey is the nectar of flowers, processed and stored by bees. The flavor of honey is most influenced by the flower it comes from. Most honey found in grocery store is from clover but honeysuckle lavender, sage, thyme and other regional honeys more are used by chefs to add flavor or balance to their creation.

Honey can be light or dark, delicate of deep and nutty. Some honey's are intensely perfumed.

Honey is often used as a substitute or replacement  for sugar, but because honey is typically sweeter than sugar less is required.

Honey is a great balance to acidic flavor and caramelized honey is a great base for dessert sauces.
